Why pink you ask? Well, it's in homage to the one and only Barbie. This delish dish seamlessly blends our love for unique culinary delights with the dazzling world of Barbiecore.


Since Greta Gerwig's "Barbie" movie made waves, a Barbiecore renaissance has swayed our wardrobes, vanity kits, and now even our dinner plates. Interested in indulging in the fantasy? Here's a simple recipe to whip up your own plate of vibrant pink pasta at home:

While Barbie Land predominantly flaunts pinks of vinyl and plastics, this velvety pasta draws its vibrant hue from a timeless vegetable: beetroot. Natural, nourishing, and undeniably chic.


Ingredients:

  • 9 ounces of your preferred pasta (spaghetti, fusilli, or rotini are our top picks!)

  • 3 medium-sized beets, trimmed, washed, and scrubbed

  • 1 tablespoon olive oil

  • 1 1/2 teaspoons salt, divided

  • 1 1/2 cups mascarpone or sour cream, divided

  • Zest and juice of 1 lemon

  • 1 large garlic clove, roughly chopped

  • 1/2 cup grated Parmesan, plus extra for serving

  • 1/2 teaspoon black pepper

  • Fresh basil leaves (optional, but highly recommended for a touch of green)

Directions:

  1. Preheat your oven to 375°F (190°C).

  2. Drizzle beets with olive oil and sprinkle with 1/2 teaspoon of salt. Wrap each beet in aluminum foil and roast for about 45-60 minutes, or until tender. Allow to cool.

  3. Once cooled, peel and quarter the beets. Blend them with 1 cup mascarpone or sour cream, lemon zest, lemon juice, garlic, Parmesan, 1 teaspoon of salt, and black pepper until smooth.

  4. Cook your pasta al dente. Once done, drain, saving a cup of pasta water.

  5. Return pasta to the pot, pour the beetroot sauce over, and toss gently. Add the reserved pasta water, a tablespoon at a time, until the sauce reaches your desired consistency.

  6. Serve with a dollop of the remaining mascarpone or sour cream, a sprinkle of Parmesan, and basil.
